A refrigerated display cabinet is the retail-facing end of the cold chain, the unit a shopper actually reaches into. It has to hold chilled or frozen product in range while staying open to browsing hands, bright lighting and a shop floor that runs far warmer than the product inside it. Every design choice in a display cabinet is a trade-off between that access and the temperature control a closed refrigerator takes for granted.
Open cabinets against doored cabinets
An open multi-deck cabinet has no door at all: shoppers reach straight onto the shelf, which speeds up browsing and is the standard format for high-turnover chilled goods. A doored cabinet, fitted with a solid or glass door on every section, holds temperature far more reliably and loses far less cold air to the room, but adds a barrier between the shopper and the product that some retailers avoid on categories where speed of pickup matters most. Retail floors typically run both formats side by side, choosing by product category rather than committing the whole store to one design.
Air curtains
An open cabinet holds its temperature using an air curtain: a continuous sheet of cold air blown down across the open face, separating the cold product zone from the warm shop air without a physical door. The curtain is a delicate thing to maintain. A draft from a nearby door, an air conditioning vent blowing across the cabinet face, or a shopper standing in front of it for too long can punch a hole in the curtain and let warm air spill straight onto the product. Cabinet placement on the shop floor matters as much as the cabinet's own rating, since the best-specified curtain still fails next to the wrong airflow.
Energy against temperature performance
Doors cut the energy a cabinet needs to hold temperature by a wide margin, since a sealed door stops the constant air exchange an open curtain allows. Doored units also hold a steadier temperature through the day, less exposed to the store's own foot traffic and ambient swings. Against that, doors add cost, can fog or condense in humid conditions, and slow down the exact kind of high-frequency, grab-and-go shopping that some chilled categories depend on. Retailers weigh that trade-off category by category rather than applying one answer store-wide, which is why open and doored formats keep coexisting instead of one replacing the other.
Frozen against chilled cabinets
A frozen display cabinet runs a far heavier refrigeration duty than a chilled one, since it has to hold product well below freezing while still fighting the same open-face heat gain a chilled cabinet deals with, or a closed door on a colder box entirely. Frozen cabinets are more often built with doors than their chilled counterparts for exactly that reason: the energy cost of an open frozen curtain is higher, and the visible frost and condensation an open freezer cabinet collects on the shop floor is its own maintenance problem. Chilled cabinets, holding a much narrower gap to room temperature, can run open far more often without the same energy or frost penalty, which is part of why open-front format is far more common on chilled aisles than on frozen ones.
Load line discipline
Every cabinet is marked with a load line, and stock is never meant to sit above it. Stacking product past the line blocks the air curtain's return path or the internal airflow ducting, and once that path is blocked the top layer of stock sits in warmer air while the cabinet's sensor, positioned to read the design airflow, reports a temperature that no longer matches what the product actually experiences. An overloaded cabinet can look fully stocked and read in range at the same time as product on top is running well outside it, which is why load line discipline is treated as a food safety rule on the shop floor, not a merchandising guideline.
Night blinds and where cabinets sit in the chain
Open cabinets are often fitted with a retractable insulated blind, pulled down over the open face after closing hours when no shopper needs access and the air curtain would otherwise run all night against an empty store. The blind cuts overnight energy loss and helps the cabinet hold temperature through the hours it matters least to keep open. Display cabinets sit at the very end of the retail cold chain, stocked from a store's own cold rooms and cold stores and refilled by deliveries that arrive by refrigerated road transport; grocery retailers, convenience chains and foodservice outlets are the main operators, and the choice of format across a single store is usually set aisle by aisle rather than by one storewide standard.
