Working in cold storage means spending a shift, or part of one, inside a room deliberately held below the temperature the human body tolerates well for long stretches. A chilled store near 2-8°C is uncomfortable over a full shift; a frozen store at -18°C to -25°C or colder is dangerous without protective clothing and without limits on how long a person stays inside continuously. The work itself, picking, packing, loading pallets, is ordinary warehouse work. The environment is what makes it a distinct occupational category with its own rules.
Every decision about staffing a cold room, from what a worker wears to how long a shift runs, traces back to one physical fact: the human body loses heat far faster in cold air than it generates through manual work, and that gap widens as the room gets colder.
Protective clothing and its limits
Layered thermal clothing, insulated boots rated for the temperature band, gloves suited to fine picking work without losing dexterity, and a hood or hat covering the head, which loses heat faster than any other body part, are standard issue for sub-zero work. None of it makes the cold hospitable. It slows every movement: a picker in full freezer gear bends, reaches and grips more slowly than the same person in ordinary clothes, and thick gloves make small, precise tasks, scanning a barcode, tying a strap, take longer every time.
Clothing also has a working life of its own. Insulation compresses and loses effectiveness after repeated wear and washing, and a worn-out garment can pass a visual check while giving meaningfully less protection than a new one, which is why serious operations replace gear on a schedule rather than waiting for it to visibly fail.
Shift rotation and exposure limits
No worker stays inside a deep-frozen room for a full shift straight through. Exposure limits, built around core body temperature and the point where cold starts to impair judgement and coordination rather than just comfort, cap continuous time in the coldest zones and require a warm-up break before going back in. The colder the zone, the shorter the continuous stretch and the longer the recovery period between stretches. Workers who load a blast freezer face a shorter but more extreme version of the same exposure, since those chambers run colder still and are entered only briefly by design.
Rotation schedules also spread the coldest tasks across a larger pool of workers rather than assigning one person to the freezer all day, which limits any individual's cumulative daily exposure and reduces the fatigue that builds when the same person handles every cold task on a shift.
Productivity and the cost per pick
A pick that takes a few seconds in an ambient warehouse routinely takes longer in a freezer, for reasons that have nothing to do with effort: slower movement in bulky clothing, fogged or frosted eyewear, numb fingers on fine tasks, and the mandatory breaks that pull a worker off the floor for part of every shift. None of that shows up as laziness. It shows up as a lower pick rate per paid hour, which is why labour cost per unit handled runs higher in a frozen zone than the same task performed at ambient temperature.
Operations that plan around this honestly staff frozen zones more heavily per unit of expected throughput than chilled or ambient zones doing comparable work, rather than discovering the gap in missed targets after the fact. Turnover in frozen roles also runs higher than in ambient positions in many operations, since sustained cold work is physically demanding in a way few other warehouse tasks are, and higher turnover adds its own recruiting and training cost on top of the direct wage premium these roles typically carry.
Safety beyond the cold itself
Cold is not the only hazard. Condensation freezes into ice on floors near doorways and defrost drains, a slip risk ambient warehouses do not share at anything like the same scale, and reduced dexterity in gloves raises the risk of a dropped load or a mishandled blade during case-cutting. Facilities layer floor treatment, mandatory footwear and task-specific glove standards on top of the temperature rules themselves.
New starters in a frozen role typically go through a short induction covering the signs of cold stress, correct clothing layering, and what to do if a limb goes numb or a headache develops, since recognising the cold's effect early matters as much as the clock limits do.
Workers spend their shifts inside the same cold rooms and cold stores and larger cold storage warehousing sites that a building brief covers from the structure and equipment side; the human factors here are the other half of running one safely.
